CHOCOLATE CHIP COOKIES in under 25 minutes

I love baking but more often than not baking doesn't love me. Something about the technique and precise measurements doesn't sit well with my lack of skills, so when recipes come through for me it's a momentous occasion. These chewy chocolate chip cookies are dedicated to my friend and Milan roommate Chloé who gave me the recipe which I sliiiightly adapted.

  • 250g all-purpose flour
  • 2g baking soda
  • 170g melted baking butter
  • 150g brown sugar + 100g white sugar
  • 1 egg + 1 egg yolk
  • vanilla extract
  • 300g chocolate chips (or 2 1/2 chopped up chocolate bars)
  • pinch of salt

Start your prep work by heating the oven to 170 C and lining two trays with baking paper.

  1. 1. Prepare your dry ingredients by mixing the baking soda in with the flour and the pinch of salt.
  2. 2. In a separate bigger bowl, mix the melted butter with the brown and white sugar. Beat in the egg and egg yolk until it forms a light cream, then add a few grams of vanilla extract.
  3. 3. Fold in the dry ingredients in with the butter mix.
  4. 4. Sprinkle in and stir the chocolate chips in the mixture until evenly distributed.
  1. 5. Using a soup spoon, take little balls of cookie dough and put them on the baking paper, about 6-7 cm apart.
6. Let them bake in the oven for roughly 15 minutes. You can tell they're done when the edges seem crustier and the top golden. Be careful not to let them in the oven for longer because they'll overbake and you will loose the chewiness. As soon as they're done, take them out of the oven and transfer to a drying rack or a plate, leaving them to cool off.

Best served with an ice coffee or hot chai tea,
depending on the season!
